I'm specifically referring to pies here since I made a peaches and cream pie with heavy cream and it came out very runny. Would it have been less runny if I had used whipping cream? Whipping cream and heavy cream are the same thing. I find that to keep cream from getting runny, before whipping the cream, put the beaters and aGLASS or STAINLESS STEEL bowl into the freezer for at least 1 hr. They are pretty much the same thing...except one has been whipped and the other hasn't.

I personally don't think there is any real difference between the two.
What did you use to set the cream? Usually, there is a thickener added in a recipe.
