Take two cookies of your choice for one sandwich.
Dig out a scoop of your favorite ice cream and place it on the flat side of one of the cookies.
Place the flat side of the other cookie over the ice cream and press firmly to spread the ice cream over the surface of the cookies.
Place each cookie in a plastic wrapper and freeze them.

yes! But what is really is yummy is making homemade cookies (chocolate chip is good with these) and spreading softened ice cream in between them.

Then freeze them until it becomes firm.
why not, just let the ice cream get soft on the counter for a bit to make it easy to spread between the cookies and then re-freeze before eating
