Whats the difference between cream and double cream?

The recipe says to use double cream for a mocha sauce, and i only have usual cream here, can i use that instead? Also can i use sugar instead of caster sugar? and can i chop cooking choc up instead of using cooking choc chips?Whats the difference between cream and double cream?
for your last two question, the answer is YES. As in cream/double cream problem, the difference is in the fat content. Double cream has AT LEAST 40%, and cream has at least 20%. As long as the recipe doesn't say to whip it, I think it's ok to substitute double cream to cream. In some cases you might get a slight difference in texture, but it won't ruin the whole thing.Whats the difference between cream and double cream?
